Notes

Make a large batch and keep it in the fridge for up to 3 days. The flavors become even better as the mint and ginger continue to infuse.

  • 1 large piece of fresh ginger, sliced
  • Juice of 4 lemons
  • 500 ml cold water
  • Raw honey, to taste
  • Fresh mint
  • Ice cubes

Instructions

  1. Bring a small pan of water to a boil and add the sliced ginger and lemon zest. Simmer for 5–10 minutes.
  2. Meanwhile, squeeze the juice of 4 lemons into a large pitcher and add 500 ml cold water.
  3. Pour the warm ginger and lemon infusion through a sieve into the pitcher.
  4. Stir in raw honey until dissolved and adjust the sweetness to your liking.
  5. Add a generous handful of fresh mint leaves and let the lemonade cool completely in the refrigerator.
  6. Serve over plenty of ice cubes and garnish with extra mint and lemon slices.
